Zucchini Fries:
- 2 large zucchini
- 2 large eggs
- 2 cups panko bread crumbs
- 1/2 cup parmesan cheese, finely grated
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat the oven: Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper.
- Slice the zucchini: Cut the zucchini into thin matchsticks.
- Prepare coatings: In one bowl, whisk eggs. In another bowl, mix breadcrumbs, parmesan, salt, and pepper.
- Coat the zucchini: Dip zucchini in egg, then breadcrumb mixture, and place on baking sheet.
- Bake: Bake for 22-25 minutes, turning occasionally for crispiness.
- Serve: Remove from oven and serve hot.
