Zucchini Fries:

  • 2 large eggs
  • 2 cups panko bread crumbs

Instructions

  1. Preheat the oven: Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper.
  2. Slice the zucchini: Cut the zucchini into thin matchsticks.
  3. Prepare coatings: In one bowl, whisk eggs. In another bowl, mix breadcrumbs, parmesan, salt, and pepper.
  4. Coat the zucchini: Dip zucchini in egg, then breadcrumb mixture, and place on baking sheet.
