Decoration
- 1/4 cup festive holiday sprinkles
- Flaky sea salt, for finishing
Instructions
- Prepare the base: Line a cookie sheet with parchment paper. Lay out one sleeve of Ritz crackers flat side up to form the bottom layer of the cookies.
- Spread peanut butter: Using about 2 teaspoons of peanut butter per cracker, spread a thick, even layer on each cracker. Eyeball the amount to ensure a nice, generous coating.
- Create sandwiches: Place another Ritz cracker on top of each peanut butter-covered cracker, rounded side up, creating a sandwich cookie (two crackers per cookie).
- Melt white chocolate: Place the white chocolate melting wafers in a microwave-safe bowl. Heat for 1 minute, stir, then heat for another minute and stir again until smooth. Optionally, add 1-2 tablespoons of coconut oil to help with melting and achieve a smoother consistency.
- Dip cookies: Using a fork, carefully dunk each peanut butter sandwich cookie into the melted white chocolate, coating it completely. Tap off any excess chocolate before placing the cookie back on the parchment paper. Drizzle any leftover melted chocolate over the cookies for decoration.
- Decorate and set: Immediately sprinkle festive holiday sprinkles and a pinch of flaky sea salt onto each chocolate-coated cookie. Allow the chocolate to set at room temperature until firm before serving.
