This Watermelon Mint Lime Slushie is a refreshing, healthy summer drink made with just fresh watermelon, lime juice, mint leaves, and ice. - 15 fresh mint leaves (no stems)
Extras (Optional)
- 1 teaspoon maple syrup (if watermelon isn’t very sweet)
- A little water, to thin if needed
Instructions
- Blend the Watermelon and Lime: Add the diced watermelon, fresh lime juice, and zest (if using) to a blender. Blend well for about 20 seconds or until no watermelon chunks remain. This creates space for the ice and ensures a smooth base.
- Add the Ice: Add the ice to the blender and blend again for about 20 seconds, or until the ice is crushed and the mixture becomes slushy. For a frostier texture, blend less; for a smoother drink, blend a bit longer based on your preference.
- Incorporate the Mint: Add the fresh mint leaves to the blender and pulse for 10-20 seconds. Avoid over-blending as it can cause the mint to taste bitter or soapy.
- Adjust and Sweeten: Taste the slushie and adjust by adding more lime juice for tanginess, more mint for a fresher flavor, or additional maple syrup if you want extra sweetness. If the mixture is too thick, add a splash of water to thin.
- Serve: Pour the slushie into glasses and serve immediately for the best texture. If it separates, simply whirl quickly in the blender again with a few ice cubes to refresh.
Notes
- You can use seeded or seedless watermelon. Blending the seeds is fine and adds nutrients without impacting texture or flavor.
- For a kid-friendly version, omit the lime and mint and just blend watermelon with ice.
- Add sparkling water on top for a fizzy spritzer variation.
- Consider experimenting with basil or cilantro instead of mint for a fun twist.
- This recipe is very forgiving and can be easily adjusted to taste or based on what you have available.
