Description

This Watermelon Mint Lime Slushie is a refreshing, healthy summer drink made with just fresh watermelon, lime juice, mint leaves, and ice. A perfect hydrating treat that’s easy to customize with natural sweetness and a burst of herby freshness. Ideal for cooling down on hot days and great for kids, too!

Fruit Base

  • 1/2 medium watermelon (about 7 cups), diced into 2-inch cubes

Citrus

  • Juice from 2 large juicy limes
  • Zest from 2 large juicy limes (optional, for stronger flavor)

Ice

  • 68 cups ice (more or less as preferred)

Herbs

  • 15 fresh mint leaves (no stems)

Extras (Optional)

  • 1 teaspoon maple syrup (if watermelon isn’t very sweet)
  • A little water, to thin if needed

Instructions

  1. Blend the Watermelon and Lime: Add the diced watermelon, fresh lime juice, and zest (if using) to a blender. Blend well for about 20 seconds or until no watermelon chunks remain. This creates space for the ice and ensures a smooth base.
  2. Add the Ice: Add the ice to the blender and blend again for about 20 seconds, or until the ice is crushed and the mixture becomes slushy. For a frostier texture, blend less; for a smoother drink, blend a bit longer based on your preference.
  3. Incorporate the Mint: Add the fresh mint leaves to the blender and pulse for 10-20 seconds. Avoid over-blending as it can cause the mint to taste bitter or soapy.
  4. Adjust and Sweeten: Taste the slushie and adjust by adding more lime juice for tanginess, more mint for a fresher flavor, or additional maple syrup if you want extra sweetness. If the mixture is too thick, add a splash of water to thin.
  5. Serve: Pour the slushie into glasses and serve immediately for the best texture. If it separates, simply whirl quickly in the blender again with a few ice cubes to refresh.

Notes

  • You can use seeded or seedless watermelon. Blending the seeds is fine and adds nutrients without impacting texture or flavor.
  • For a kid-friendly version, omit the lime and mint and just blend watermelon with ice.
  • Add sparkling water on top for a fizzy spritzer variation.
  • Consider experimenting with basil or cilantro instead of mint for a fun twist.
  • This recipe is very forgiving and can be easily adjusted to taste or based on what you have available.
