For the Mojito

  • 10 small fresh spearmint leaves
  • 1/2 medium lime (cut into 3 wedges, divided)
  • 1 tablespoon monk fruit sweetener (or stevia, or sugar)
  • 7 ounces lemon-lime seltzer (or club soda, or sugar-free lemon-lime soda)
  • 1 cup ice cubes (as needed)

For Garnish

  • Fresh mint sprigs

Instructions

  1. Muddle Mint & Lime: In a sturdy tall glass, place the mint leaves and 1 lime wedge. Using a muddler, crush the mint and lime gently to release the mint oils and lime juice for maximum flavor.
  2. Add Sweetener & More Lime: Add the remaining lime wedges and 1 tablespoon sweetener (monk fruit sweetener, stevia, or sugar). Muddle again to extract more lime juice and dissolve the sweetener. Do not strain the mixture; keeping the bits adds flavor and texture.
  3. Add Ice & Seltzer: Fill the glass almost to the top with ice cubes. Pour in the lemon-lime seltzer, club soda, or a sugar-free lemon-lime soda until the glass is full, which will enhance the fizzy effect and coolness.
  4. Mix & Garnish: Stir well to combine all ingredients. Garnish with a few fresh mint sprigs and serve immediately with a straw to enjoy the refreshing aroma and taste.
