Description

Delight in these fluffy Ube Mochi Pancakes, infused with the unique flavor of ube and coconut milk. Perfect for a colorful and delicious breakfast treat!


Ingredients

Wet Ingredients:

  • 1/4 cup light brown sugar
  • 2 tbsp unsalted butter, melted
  • 2 eggs
  • 1 1/2 cup coconut milk, full fat
  • 1 tsp vanilla extract
  • 1/2 tsp ube extract
  • 1/4 cup ube halaya

Dry Ingredients:

  • 1/4 tsp salt
  • 1 3/4 cup sweet rice flour
  • 2 tsp baking powder

Instructions

  1. Combine all the ingredients: Mix all the ingredients in a large bowl until a thick, uniform purple batter forms.
  2. Heat the pan: Melt butter in a nonstick pan over medium-low heat.
  3. Pour the batter: Using a ⅓ cup measuring spoon, pour the batter into the pan in a circular motion to form pancakes.
  4. Cook the pancakes: Cook for 1-2 minutes until bubbles form, then flip and cook for another 1-2 minutes.
  5. Serve: Transfer pancakes to a plate, and repeat the process until all batter is used. Top with fruit and maple syrup.

Notes

  • For the vibrant purple color, use Butterfly Ube Extract.
  • If using a different ube extract, double the amount for color intensity.
