Ingredients

Units Scale

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 ounce envelope taco seasoning
  • 2/3 cup salsa
  • 1 can (10 ounces) Mild Red Enchilada Sauce

Cheese and Vegetables

  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup thinly sliced green onions, divided

Base and Toppings

  • 8 cans large canned biscuits
  • Assorted taco toppings such as lettuce, tomato, salsa, and sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) to prepare for baking the casserole.
  2. Prepare Baking Dish: Spray a 9×13-inch baking dish with non-stick spray to prevent sticking during baking.
  3. Cook Ground Beef: In a large pan over medium heat, brown the ground beef until fully cooked and no longer pink, then drain excess grease to reduce fat.
  4. Add Seasoning and Sauces: Stir in the salsa, red enchilada sauce, and taco seasoning into the cooked beef, mixing thoroughly to incorporate all flavors.
  5. Add Cheese and Onions: Add half of the shredded cheddar cheese and half of the sliced green onions to the beef mixture, stirring evenly.
  6. Prepare Biscuits: Cut each of the canned biscuits into eight pieces, then gently fold them into the beef mixture without crushing them.
  7. Transfer to Baking Dish: Pour the combined mixture evenly into the prepared baking dish, spreading it smoothly for even baking.
  8. Bake Initial Stage: Bake in the preheated oven for 20 minutes to cook the biscuits through and blend the flavors.
  9. Add Remaining Cheese: Remove the casserole from the oven and evenly sprinkle the remaining cheddar cheese on top.
  10. Bake Final Stage: Return the casserole to the oven and bake for an additional 5 minutes until the cheese is melted and bubbly.
  11. Garnish and Serve: Remove from oven and garnish with remaining green onions and your choice of taco toppings such as lettuce, tomato, salsa, and sour cream. Serve warm and enjoy!
