Description

Sweet Chili Chicken is a quick and flavorful stir-fry featuring tender chicken pieces coated in a sweet and spicy chili sauce, combined with colorful vegetables for a satisfying meal. Perfect for busy weeknights, this dish balances heat, sweetness, and savory flavors all in one skillet.

Ingredients

Units Scale

For the Chicken Marinade

  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch

For the Chicken and Vegetables

  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 1 bell pepper, sliced
  • 1 cup broccoli florets

Garnishes

  • Sesame seeds (for garnish)
  • Green onions, sliced (for garnish)

Instructions

  1. Marinate Chicken: In a bowl, combine sweet chili sauce, soy sauce, and cornstarch. Add the chicken pieces and toss to coat evenly. Let marinate for 15 minutes to absorb flavors.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until browned and cooked through, approximately 7-10 minutes. Remove chicken from skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add garlic and ginger, cooking for about 30 seconds until fragrant. Add sliced bell pepper and broccoli florets. Sauté for 5-7 minutes until vegetables are tender-crisp.
  4. Combine and Heat: Return the cooked chicken to the skillet with vegetables. Pour any remaining marinade over the mixture and cook for an additional 2-3 minutes until heated through and well coated.
  5. Serve: Garnish with sesame seeds and sliced green onions. Serve hot, ideally over rice or noodles for a complete meal.

Notes

  • Adjust the sweetness by adding more or less sweet chili sauce according to your taste.
  • Serve over rice or noodles for a more filling meal.
  • You can add additional vegetables like snap peas or carrots for variety.
