Dry Ingredients
- 2 cups rolled oats (gluten-free, if needed)
Wet Ingredients
- 2 large bananas, mashed
- 1/2 cup almond butter (can substitute any nut or seed butter of choice)
Additional Mix-ins
- 1/4 cup strawberries, chopped
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat the oven: Set your oven to 180°C (350°F) and line a large baking tray with parchment paper or prepare a Silpat cookie sheet. This ensures cookies will not stick and bake evenly.
- Mix ingredients: In a large mixing bowl, combine the rolled oats, mashed bananas, and almond butter thoroughly. After mixing, gently fold in the chopped strawberries and chocolate chips, ensuring they are evenly distributed without overmixing.
- Form cookies: Shape the dough into 12 small balls. Place each ball on the prepared baking sheet and gently press down to flatten each ball into a cookie shape for uniform baking.
- Bake: Place the tray in the preheated oven and bake for 12 minutes or until the edges turn golden brown. This will cook the cookies through while keeping them soft inside.
- Cool: Remove the cookies from the oven and allow them to cool completely on the baking tray to set properly before serving.
Notes
- To Store: Keep leftover cookies in a sealed container in the refrigerator; they will stay fresh for up to 1 week.
- To Freeze: Place cookies in a ziplock bag and store in the freezer for up to 6 months. Thaw before eating.
