Description

This Slow Cooker BBQ Chicken is an easy and delicious recipe featuring tender, juicy chicken breasts slowly cooked in a flavorful BBQ sauce with onion, brown sugar, Worcestershire sauce, and olive oil. Perfect for a hands-off meal, the chicken is cooked to shreddable perfection and coated in a sweet and tangy sauce. Serve it as is or in sandwiches with coleslaw and pickles for a satisfying dish.

Ingredients

Scale

Chicken

  • 3 lbs boneless, skinless chicken breasts

Sauce

  • 1 1/2 cups BBQ Sauce (Sweet Baby Ray’s Honey BBQ recommended)
  • 1/2 medium onion, grated with juice
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons brown sugar

Instructions

  1. Prepare the sauce: In a 5-6 quart slow cooker, stir together the BBQ sauce, grated onion with juice, olive oil, Worcestershire sauce, and brown sugar until well combined to create a flavorful base for the chicken.
  2. Add the chicken: Place the chicken breasts in the slow cooker and turn them to coat evenly with the sauce mixture, ensuring each piece is fully covered.
  3. Slow cook the chicken: Cover the slow cooker and cook on high for 2 to 3 hours or on low for 6 to 7 hours. For smaller chicken pieces, smaller batches, or faster-cooking slow cookers, check earlier. The chicken is done when it reaches an internal temperature of 165˚F and can be easily shredded.
  4. Shred the chicken: Remove the cooked chicken breasts to a cutting board and use two forks to shred the meat finely into bite-sized pieces.
  5. Mix shredded chicken with sauce: Return the shredded chicken to the slow cooker and stir well to coat all the pieces in the delicious BBQ sauce before serving.

Notes

  • This recipe requires minimal prep time as all ingredients are simply combined in the slow cooker.
  • The chicken comes out fall-apart tender and juicy with a rich, slightly sweet BBQ flavor.
  • Serve the BBQ chicken as is, or pile it on buns with coconut coleslaw and dill pickle chips for a classic pulled chicken sandwich experience.
  • Check chicken doneness early if cooking smaller portions or wanting to avoid overcooking.
