- 1 Tbsp lime zest (6g)

- 1 cup unsalted butter, room temperature (226g)
- 2 Tbsp lime juice (12g)
- 1 tsp lime zest (2g)
- 1 tsp vanilla extract or vanilla bean paste (4g)
- 1/2 tsp fine salt (3g)
- 3 1/2 cups powdered sugar (452g or 1 lb. box)
- electric green gel food coloring

- 1/4 cup red fondant
- 1/4 cup black fondant
- 1 Tbsp yellow fondant
- 1 Tbsp white fondant
Instructions
- Prepare the Cupcake Batter: In a large bowl, cream together the 6 tablespoons unsalted butter and 3/4 cup granulated sugar until light and fluffy. Add the 1/3 cup egg whites, 1/3 cup sour cream, 1/3 cup whole milk, 1/4 cup lime juice, vanilla extract, lime zest, and green gel food coloring. Mix until fully combined.
