Sandwich

- 4 slices thick cut sourdough bread
- 1 cup kimchi, roughly chopped
- 1/4 cup fresh basil leaves
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup Havarti or fontina cheese, shredded

Instructions

Next, layer the shredded sharp cheddar cheese, chopped kimchi, and fresh basil leaves evenly. Top each with the remaining bread slices, buttered side facing out.
- Cook the sandwiches: Heat a skillet over medium heat. Place one sandwich at a time in the skillet and cook until the bread turns golden brown and crisp, about 3 to 5 minutes per side. Press down gently with a spatula to help the sandwich cook evenly and the cheese melt.
