Description

These Meal Prep Breakfast Eggs are a delicious and convenient way to start your day. Packed with sausage (or bacon), vegetables, and cheese, these protein-rich eggs are perfect for meal prepping and enjoying throughout the week.

Main Ingredients:

  • 1 teaspoon avocado oil
  • 1/2 pound ground sausage or chopped bacon
  • 1/2 small onion, chopped
  • 1/2 bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1 cup roughly chopped fresh spinach
  • 8 large eggs

Additional Ingredients:

  • 1/4 cup cottage cheese or Greek Yogurt or half & half
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the Oven: Preheat the oven to 350ºF.
  2. Cook the Sausage Mixture: In a large pan over medium-high heat, cook the sausage, onion, peppers, and mushrooms for 3-4 minutes. Add the spinach and sauté until wilted.
  3. Prepare the Egg Mixture: In a mixing bowl, whisk together eggs, cottage cheese, cheddar cheese, garlic powder, paprika, salt, and pepper. Combine with the cooked sausage mixture.
  4. Bake: Grease meal prep containers or muffin tins, divide the mixture, and bake for 20-25 minutes until set.
  5. Cool and Store: Allow to cool, then refrigerate for up to 5 days. Reheat before serving.

Notes

  • If using bacon, cook until crispy before adding to the mixture for added flavor.
