Salmon Salad:
- 1/2 pound raw skinless salmon fillet
- 1/3 cup chopped celery
- 1/4 cup chopped red onion
- 1/2 lemon (juice of)
- 1 tablespoon mayonnaise
- 1/4 teaspoon kosher salt
- Black pepper (to taste)
Instructions
- Cook the salmon: Cook the salmon in the microwave, covered, for about 2 minutes until cooked through, or use leftover cooked salmon.
- Flake the salmon: Flake the cooked salmon with a fork and let it cool.
- Prepare the salad: Add the flaked salmon, chopped celery, red onion, lemon juice, mayonnaise, kosher salt, and black pepper in a bowl. Mix well.
- Refrigerate: Refrigerate the salad for up to 4 days to let the flavors meld.
