Instructions

  1. Grind part of the pistachios: Place ¼ cup pistachios in a food processor fitted with a metal blade and process until the nuts resemble coarse sand. Transfer this to a small bowl and set aside for later use.
  2. Process remaining nuts: Add the cashews and remaining ¼ cup pistachios to the food processor and process until finely ground to form a smooth nut base.
  3. Add dates and flavorings: Add the pitted Medjool dates, pumpkin purée, pinch of sea salt, pumpkin pie spice, cinnamon, and vanilla extract to the food processor. Continue processing until the ingredients are fully combined and smooth. Taste and adjust spices if desired.
  4. Form energy balls: Using a spoon or your hands, scoop the mixture and roll into 9 equal golf ball–sized balls.
  5. Coat the balls: Roll each ball in the reserved coarsely ground pistachios to coat the exterior for added texture and flavor.
  6. Serve or store: Serve immediately or store in the refrigerator or freezer for later enjoyment.
