Instructions

  1. Prepare the Brownie Batter: Melt the 200 g dark chocolate and 200 g unsalted butter together until smooth. In a separate bowl, whisk 4 medium eggs with 275 g light brown soft sugar until light and fluffy. Gradually mix in the melted chocolate and butter mixture. Sift together 100 g plain flour and 50 g cocoa powder, and gently fold into the batter. Finally, fold in 300 g chocolate chips for extra chocolatey goodness.
  2. Bake the Brownies: Pour the batter into a lined baking tin, spreading evenly. Bake in a preheated oven at 180°C (350°F) for approximately 30 minutes or until a skewer inserted comes out with moist crumbs. Allow the brownies to cool completely in the tin before proceeding.
  3. Make the Chocolate Buttercream Frosting: Using an electric mixer, beat 200 g room temperature unsalted butter until creamy. Gradually add 400 g icing sugar and 26 g cocoa powder, continuing to beat until light and fluffy. Divide the buttercream into portions for coloring and decorating.
  4. Create the Pumpkin Buttercream Decorations: Tint a portion of the buttercream with 1 tsp orange food colouring and another small portion with 1/4 tsp green food colouring. Pipe small pumpkin shapes using the orange buttercream and add green stems and leaves with the green tinted buttercream.
  5. Assemble the Pumpkin Patch Brownies: Spread a layer of chocolate buttercream over the cooled brownies. Sprinkle 75 g finely crushed Oreos evenly over the frosting to resemble ‘dirt.’ Place the buttercream pumpkins on top to complete your pumpkin patch effect.
