Description

This Monster Cookie Cottage Cheese Mousse is a protein-packed, creamy dessert featuring a smooth cottage cheese base blended with peanut butter and chocolate protein powder. Topped with a velvety chocolate peanut butter ganache and mini monster cookie dough balls, it makes a perfect grab-and-go breakfast or a guilt-free sweet treat that won’t spike blood sugar levels.

Ingredients

Scale

Cottage Cheese Mousse

  • 16 oz cottage cheese
  • 3 tbsp creamy peanut butter (or almond butter)
  • 1/3 cup chocolate protein powder
  • 3 tbsp medjool date syrup (or maple syrup)
  • 1 tsp vanilla extract

Ganache

  • 1 tbsp dark chocolate chips
  • 3 tbsp creamy peanut butter

Mini Monster Cookie Dough Balls

  • 1/4 cup creamy peanut butter
  • 3 tbsp vanilla protein powder
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp dye-free chocolate gems (crushed)

Instructions

  1. Blend the mousse base: Combine the cottage cheese, creamy peanut butter, chocolate protein powder, medjool date syrup, and vanilla extract in a blender. Blend until the mixture is completely smooth, scraping down the sides as needed to ensure even blending.
  2. Prepare the jars (optional): For added texture and flavor, place crushed gluten-free cookies and/or crushed chocolate gems at the bottom of storage jars (6oz jars recommended) before adding the mousse.
  3. Assemble mousse: Pour the blended cottage cheese mousse evenly on top of the cookie crumb layer in each jar, filling up the jars.
  4. Chill: Refrigerate the jars for at least a few hours, or preferably overnight, so the mousse thickens to a creamy, firm texture.
  5. Melt ganache: Microwave the peanut butter and dark chocolate chips together for 30-45 seconds until smooth and pourable. Stir well to combine.
  6. Add ganache topping: Pour the warm ganache over each mousse jar, then sprinkle with additional chocolate chips if desired.
  7. Make cookie dough balls: In a bowl, mix creamy peanut butter, vanilla protein powder, pure maple syrup, vanilla extract, and crushed dye-free chocolate gems. Roll the dough mixture into small bite-sized balls.
  8. Top and serve: Add the mini monster cookie dough balls on top of the mousse and ganache layer. Enjoy immediately or keep refrigerated for later.

  • Store in airtight containers and refrigerate up to 3 days for best freshness.
  • Perfect for a grab-and-go breakfast or an afternoon sweet treat that won’t spike blood sugar.
