Cheese Sauce

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 cups milk, warmed
  • 8 ounces white American cheese, cubed

Cheesesteak Fries

  • 1 pound ribeye steak (see note)
  • 2 tablespoons oil, divided
  • 1 medium green bell pepper, sliced 1/8″ thick
  • 1 medium onion, sliced 1/8″ thick
  • 1 bag frozen crinkle-cut fries

Instructions

  1. Prep the Steak: Place the ribeye steak in the freezer for about 20 minutes until firm. Once chilled, slice into thin 1/8″ strips. Toss the sliced steak with 1 tablespoon of oil and set aside.
  2. Cook the Fries: Prepare the frozen crinkle-cut fries according to package instructions, then keep warm.
  3. Make Cheese Sauce: Melt butter in a saucepan over medium heat. Stir in the flour and cook for about 1 minute to form a roux. Gradually whisk in the warmed milk, cooking and stirring until the mixture thickens, about 3-5 minutes. Reduce heat to low and slowly add the cubed American cheese and shredded Parmesan, stirring until smooth. Keep warm.
  4. Cook the Meat, Peppers, & Onions: Heat 1 tablespoon of oil in a skillet over medium-high heat. Sear the beef strips until browned and cooked through, then remove and set aside. In the same skillet, add remaining oil and sauté the sliced peppers and onions until caramelized and tender, about 8-10 minutes. Return the beef to the skillet, mixing well; cook together for another 2 minutes to combine flavors. Remove from heat.
  5. Assemble the Dish: Spread the cooked fries on a serving platter. Top evenly with the meat and vegetable mixture. Pour the warm cheese sauce generously over the top, and serve any remaining sauce on the side.
