Potatoes
- 3 pounds red potatoes, halved
Seasoning & Oil
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Cheese
- 1/3 cup grated Parmesan cheese
Finishing Touches
- 2 teaspoons unsalted butter
- 2 teaspoons chopped parsley leaves
Instructions
- Prepare Oven & Baking Sheet – Preheat your oven to 400°F (200°C). Prepare a large baking sheet by spraying it with non-stick spray or lightly greasing with oil.
- Prep Potatoes – Cut the red potatoes in half and place them in a large bowl.
- Season Potatoes – Add olive oil, minced garlic, dried thyme, oregano, basil, and grated Parmesan cheese to the potatoes. Sprinkle salt and pepper to your preference. Toss everything together until the potatoes are evenly coated.
- Arrange on Baking Sheet – Spread the seasoned potatoes on the baking sheet in a single layer with the peel side up to help the cut side crisp.
- Bake Potatoes – Roast in the preheated oven for 25-30 minutes, flipping the potatoes halfway through the baking time so they cook evenly and become golden brown and crisp.
- Add Butter & Parsley – While the potatoes are baking, melt the butter either on the stove or in the microwave. Once potatoes are finished, drizzle with melted butter and sprinkle with chopped parsley before serving.
Notes
- For extra crispiness, use a convection setting if your oven has one.
- Serve immediately for best texture.
- You can substitute Yukon gold potatoes if red potatoes are not available.
- Add more garlic or herbs to your preference for a stronger flavor profile.
