Snack Mix
- 9 oz Oyster crackers (about 5 cups)
Toffee Mixture
- 1 cup Dark brown sugar
- 1 cup Unsalted butter
- 1 tsp Vanilla extract
- 2 tsp Ground cinnamon (divided)
Cinnamon Sugar Topping
- 3 tbsp Granulated sugar
- 3/4 tsp Kosher salt
- 1 tsp Ground cinnamon (from the divided cinnamon)
Instructions
- Prepare the oven and baking sheet: Preheat your oven to 350 degrees F. Line an extra-large rimmed baking sheet with aluminum foil and then cover it with parchment paper to prevent sticking.
- Arrange the crackers and prepare topping: Spread the oyster crackers out in a single layer on the prepared baking sheet. In a small bowl, mix together 1 teaspoon of ground cinnamon, granulated sugar, and kosher salt. Set this cinnamon sugar mixture aside for later.
- Make the toffee sauce: In a small heavy-bottomed saucepan, combine the unsalted butter and dark brown sugar. Heat over medium heat until the mixture begins to boil. Allow it to boil for 2 minutes, stirring occasionally to prevent burning. Remove the pan from heat and stir in the vanilla extract and the remaining 1 teaspoon of cinnamon.
- Coat the crackers: Pour the hot toffee mixture evenly over the oyster crackers on the baking sheet. Gently toss or stir the crackers to coat them well, making sure they are evenly covered with the toffee sauce.
- Bake the snack mix: Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the mixture is bubbly and golden, infusing the crackers with a rich toffee flavor.
- Add the cinnamon sugar topping: Remove the baking sheet from the oven and immediately sprinkle the reserved cinnamon sugar mixture evenly over the hot crackers for that classic churro flavor.
- Cool and serve: Allow the cracker mix to cool completely on the baking sheet. Once cool, break apart any large clusters to create bite-sized pieces and serve.

- If you don’t have parchment paper, be sure to butter the aluminum foil or the baking sheet directly to prevent the toffee from sticking.
