Instructions

- Mix wet ingredients: In a large bowl, whisk together softened butter, light brown sugar, granulated sugar, and vanilla extract until the mixture is light and creamy. Then whisk in the egg until fully incorporated.
- Add dry ingredients: Combine the flour, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined to avoid overworking the dough.
- Fold in chocolate chips and assemble first layer: Fold half of the chocolate chips into the cookie dough. Spoon half of the dough onto the prepared skillet or pie dish, spreading it evenly to form the bottom layer.
- Melt Nutella: Place the Nutella in the microwave for 30 seconds until it becomes runnier and easier to spread.
- Spread Nutella layer: Evenly spread the melted Nutella over the cookie dough base, leaving about one inch clear around the edges to help with layering.
- Add second cookie layer and chocolate chips: Spoon the remaining cookie dough over the Nutella, smoothing it out using the back of a metal spoon and your fingers if needed. Sprinkle the remaining chocolate chips evenly on top.
- Bake the cookie pie: Place the skillet in the preheated oven and bake for 25-30 minutes for a gooey center. For a firmer cookie pie, cover with aluminum foil after 30 minutes and bake for an additional 10 minutes.
