Dry Ingredients
- 1 cup toasted pecans
- 1 (11 ounce box) vanilla wafers (about 2 ¾ cups crumbs)
- 1 cup (113g) powdered sugar
- 2 tablespoons (10g) cocoa powder
Wet Ingredients
- 3 tablespoons (45ml) corn syrup
- ⅓ cup (79ml) spiced or white rum
- ½ teaspoon vanilla extract
For Rolling
- Cocoa powder and/or powdered sugar (for coating)
Instructions
- Toast and Process Pecans: Place the toasted pecans in a food processor and pulse until they become finely ground, but take care not to over-process to the point they turn into pecan butter. Remove and set aside.
- Process Vanilla Wafers: Add the vanilla wafers to the food processor and process until finely ground into crumbs.
- Combine Ingredients: Return the ground pecans to the food processor with the powdered sugar, cocoa powder, corn syrup, vanilla extract, and rum. Process the mixture until it becomes thick and well combined into a dough-like consistency.
- Form Balls: Scoop the mixture by tablespoon-sized portions and roll between your hands to create smooth balls.
- Roll in Coating: Roll each rum ball in cocoa powder and/or powdered sugar to coat evenly.
- Chill and Store: Place the coated rum balls in an airtight container and refrigerate for up to 2 weeks to let flavors meld and firm up.
