Mushroom Filling:
- 2 tablespoons extra virgin olive oil, divided
- 1 large yellow onion, thinly sliced
- 1/2 teaspoon kosher salt
- 16 ounces baby bella mushrooms, sliced
- 1/2 teaspoon minced garlic
- 2 teaspoons finely chopped fresh thyme leaves or 1/2 teaspoon dried
- 1/4 teaspoon ground black pepper
- 1/2 cup shredded Gruyere, Swiss, or similar cheese (about 1 1/2 ounces)
Puff Pastry:
- 2, 10-inch square sheets frozen puff pastry, thawed
- 1 egg, beaten
- 3 tablespoons whole-grain mustard
Garnish:
- Chopped fresh parsley for garnish
Instructions
- Prepare the Filling: Heat 1 tablespoon olive oil in a skillet and caramelize the onions. Set aside. In the same skillet, sauté mushrooms, garlic, thyme, and pepper. Combine with onions and cheese.
- Assemble the Bites: Roll out puff pastry, cut into rounds, brush with egg, top with mustard and filling.
- Bake: Bake at 400°F for 25 minutes until golden and crisp. Garnish with parsley before serving.
Notes
- Puff pastry bites can be refrigerated for up to two days.
- To reheat, bake in a 400°F oven for 3-5 minutes.
- They can be made ahead and frozen for up to two weeks.
