Ingredients
Scale
Miso Butter
- 4 tablespoons (1/2 stick) unsalted butter, at room temperature
- 2 tablespoons red, white, or yellow miso
Vegetables
- 1 1/2 pounds whole broccoli heads or crowns, with stems
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Salmon
- 4 (6 ounce) center-cut salmon fillets, 1 to 1 1/2 inches thick
- Salt and pepper, to taste
Garnish
- 2 tablespoons chopped parsley
- 2 scallions, thinly sliced
Instructions
- Preheat the oven. Center a rack in the oven and preheat it to 450°F to prepare for roasting the broccoli.
- Make miso butter. In a small bowl, stir together the softened butter and miso paste until smooth and well combined.
- Prepare the broccoli. Trim off the tough end of the broccoli stalk with a paring knife. Separate the stalk from the head at the branching point, peel the stalk, and cut it into 3- to 4-inch sticks. Cut the broccoli crown lengthwise into 3 to 4 pieces for even roasting.
- Season and roast broccoli. Place the broccoli in the center of a baking sheet. Drizzle with olive oil, then sprinkle with kosher salt and black pepper. Massage the oil and seasonings over the broccoli with your hands. Spread the broccoli in one layer and roast for 15 minutes, stirring and flipping halfway through to ensure even cooking. Remove from oven and reduce the oven temperature to 425°F.
- Add salmon and apply miso butter. Create space on the baking sheet and arrange the salmon fillets skin-side down. Lightly season with salt and pepper. Spread the miso butter evenly over the top of each fillet using a butter knife.
- Roast salmon and broccoli. Return the baking sheet to the oven and roast the salmon and broccoli together for an additional 10 minutes, or until a thermometer inserted into the thickest part of the salmon reads 135°F. Remove from oven.
- Broil for finishing touches. Move an oven rack within 3 to 4 inches of the broiler element and turn the broiler on. If the miso butter has softened too much or unevenly coated the fillets, spread it again evenly over the salmon. Broil for 1 to 2 minutes until the edges of the fillets are nicely charred. Remove from oven.
- Rest and garnish. Let the salmon rest for 5 minutes before serving. Sprinkle chopped parsley and sliced scallions over the top as garnish. Serve alongside baked potatoes or your preferred side dish.
Notes
- This recipe is a quick, flavorful one-pan dinner that combines the natural sweetness of roasted broccoli with moist salmon topped in savory miso butter.
- Adjust the type of miso paste depending on your taste preference—red miso is stronger and saltier, while white miso is milder and sweeter.
- Using center-cut salmon fillets ensures even cooking and beautiful presentation.
- Keep an eye during broiling to prevent burning; the broil step is mainly to add a lightly charred finish for flavor and texture.
- Pair this dish with baked potatoes or steamed rice for a complete meal.
