Shrimp:

- 1 to 2 tsp smoked Spanish paprika
- 1/2 tsp each salt and pepper
- 1/2 tsp ground coriander
- 1/4 tsp cayenne
- 1/4 tsp sugar
Sauce:
- 1 tbsp butter (ghee clarified butter)
- 3 tbsp Extra virgin olive oil
- 3 shallots, thinly sliced
- 4 garlic cloves, chopped
- 1/2 green bell pepper, cored and sliced
- 1/2 yellow bell pepper, cored and sliced
- 1 cup canned diced tomato
- 1/3 cup chicken or vegetable broth
- 2 tbsp dry white wine
- 2 tbsp fresh lemon juice
- 1/3 cup chopped parsley leaves
Instructions
- Prepare Shrimp: Pat the shrimp dry and coat with flour, paprika, salt, pepper, coriander, cayenne, and sugar.
- Cook Ingredients: In a skillet, sauté shallots, garlic, and bell peppers. Add shrimp, tomatoes, broth, wine, and lemon juice. Cook until shrimp is pink and opaque.
- Finish: Stir in parsley and serve hot.
