Chicken and Seasoning
- 650 g (1.4 lb) Boneless &; skinless chicken breast, About 4 breasts, cut into bite-sized pieces
- 1 tbsp Olive oil
- 3 Garlic cloves, peeled and crushed
- 170 g (6 oz) Sun dried tomatoes, drained and very finely chopped
- 1 tsp Oregano
- 2 tsp Paprika
- Freshly ground black pepper, to taste
Pasta and Sauce
- 250 g (9 oz) Dried pasta
- 650 ml (2.75 cups) Chicken stock
- 150 ml (0.75 cups) Double cream (heavy cream)
- 50 g (2 oz) Parmesan cheese, grated
- 120 g (4 oz) Spinach
Instructions
- Cook the chicken: In a large, deep frying pan, heat the olive oil over medium heat. Once hot, add the chicken pieces along with a good sprinkling of freshly ground black pepper. Cook for about 5 minutes, stirring occasionally, until all sides begin to brown.
- Add flavorings: Lower the heat and stir in the crushed garlic, finely chopped sun-dried tomatoes, oregano, and paprika. Cook and stir for 3 to 5 minutes until the garlic softens and the mixture is fragrant.
- Cook pasta with stock: Add the dried pasta and chicken stock to the pan. Stir well to combine everything, then cover with a lid. Let it cook for 15 to 20 minutes over medium-low heat, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
- Finish with spinach and cream: Reduce heat to the lowest setting. Add the spinach and double cream, stirring well. Cook for 1 to 3 minutes until the spinach has wilted and the cream is warmed through. Confirm the chicken is fully cooked and adjust seasoning with salt and pepper if necessary.
- Serve: Turn off the heat and stir in the grated Parmesan cheese until melted and combined. Serve immediately for a rich and satisfying meal.
Notes
- Oil: Olive oil is recommended, but using some of the oil from the sun-dried tomatoes jar adds extra flavor.
- Cooking Time Variability: Pasta cooking times may vary depending on heat and pasta shape. Monitor closely and add a splash of boiling water if needed to finish cooking.
- Sun-Dried Tomatoes: Finely chopping them helps them blend into the sauce and enhances flavor without an overwhelming texture.
