- 1 cup mixed vegetables (diced onions, carrots, bell peppers)
- Salt and pepper to taste
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried tarragon
Additional Ingredients:
- 4 large eggs
- 1/2 cup Spam or cooked meat, diced
- 1/2 cup cheddar cheese or mozzarella
- 1 handful of baby spinach or spring mix
Topping Ideas:

Instructions
- Heat the pan: Heat olive oil in a large frying pan over medium-high heat.
- Cook vegetables: Add mixed vegetables to the pan and cook until slightly softened.
- Add eggs: Beat eggs and pour them into the pan, cooking until they start to solidify.
- Season and add toppings: Season eggs, add Spam, cheese, and spinach. Fold omelette in half.
- Serve: Cut omelette in half, plate, and top with preferred toppings.
