Instructions
- Heat the Oil: Heat a large pot over medium-high heat for about one minute. Add 2 tablespoons of olive oil and heat until hot, about 30 seconds.
- Cook the Ground Turkey: Add the ground turkey to the pot and cook, breaking it apart as it cooks. Continue for 4 to 5 minutes until fully cooked. Remove from the pot and set aside.
- Sauté Vegetables: In the same pot over medium heat, add the remaining 1 tablespoon of oil, chopped onions, and diced carrots. Cook until they soften and brown at the edges, about 4 to 5 minutes. Add minced garlic and grated ginger; cook until fragrant, about 1 minute. If using, stir in flour and cook for an additional 1 to 2 minutes.
- Add Seasonings: Stir in tomato paste, ground cumin, red chili flakes (if using), and kosher salt. Mix everything well to combine the flavors.
- Add Beans: Add the drained and rinsed white beans to the pot.
- Pour in Chicken Stock: Gradually add chicken broth in small splashes while stirring continuously. Bring the mixture to a boil, then reduce heat to a simmer.
- Return Turkey and Simmer: Return the cooked ground turkey to the pot. Partially cover and let simmer for 20 minutes, stirring occasionally.
- Add Kale: Stir in the chopped kale and cook until it wilts, about 5 minutes.
- Add Herbs and Lemon: Gently mix in fresh parsley or cilantro and fresh lemon juice to brighten the flavors.
- Adjust Seasoning and Serve: Taste the soup and adjust salt, cumin, and lemon juice as needed for a lively taste. Serve with an optional sprinkle of red pepper flakes for extra heat. Enjoy!
