Instructions

  3. Sauté Vegetables: In the same pot over medium heat, add the remaining 1 tablespoon of oil, chopped onions, and diced carrots. Cook until they soften and brown at the edges, about 4 to 5 minutes. Add minced garlic and grated ginger; cook until fragrant, about 1 minute. If using, stir in flour and cook for an additional 1 to 2 minutes.
  4. Add Seasonings: Stir in tomato paste, ground cumin, red chili flakes (if using), and kosher salt. Mix everything well to combine the flavors.
  5. Add Beans: Add the drained and rinsed white beans to the pot.
  6. Pour in Chicken Stock: Gradually add chicken broth in small splashes while stirring continuously. Bring the mixture to a boil, then reduce heat to a simmer.
