  • 1 large green pepper, diced
  • 1 1/2 lbs russet potatoes, diced into 1/2″ cubes
  • 4 cups leftover turkey, roughly chopped
  • 6 garlic cloves, minced
  • 1 tbsp poultry blend (rosemary, thyme, sage), chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup turkey gravy


Instructions

  1. Heat Butter or Bacon Fat: Heat 3 tablespoons of unsalted butter or bacon fat in a large skillet over medium heat until melted and hot.
  2. Sauté Onions and Peppers: Add the diced sweet onion and green pepper to the skillet and cook for about 3 minutes, stirring occasionally, until they start to become translucent and fragrant.
  3. Cook Potatoes: Add the diced russet potatoes to the skillet. Cook for about 15 minutes, stirring occasionally, until the potatoes are tender and begin to crisp on the edges.
  4. Add Turkey and Seasonings: Toss in the roughly chopped leftover turkey, minced garlic, chopped poultry blend herbs, kosher salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally, until the turkey is heated through and the potatoes get a nice char.
  5. Adjust Seasoning and Serve: Taste and adjust seasoning if needed. Remove from heat, top with warm turkey gravy, and serve immediately.
