Description

This Keto Low Carb Cloud Bread Loaf is a light and fluffy bread alternative that is perfect for those following a low-carb or keto lifestyle. With just a few simple ingredients, you can enjoy this delicious bread with your favorite toppings or as a side to your meals.

Egg Yolk Mixture:

  • 6 large eggs separated, room temperature
  • 4 ounces sour cream or 113 grams
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup whey protein powder or 2.5 scoops or 92 grams
  • 1/2 teaspoon optional: 1/4 tsp each of garlic powder and onion powder (For savory bread only, skip for French Toast)
  • 1 tsp optional: vanilla stevia (for French Toast)

Egg White Mixture:

  • 1/2 teaspoon cream of tartar

Optional Toppings:

  • sesame seeds or bagel seasoning

Instructions

  1. Preheat oven: Preheat oven to 300 degrees F.
  2. Whip egg whites: In a stand mixer or electric hand mixer, whip egg whites with cream of tartar until stiff peaks form, about 10-15 minutes.
  3. Prepare egg yolk mixture: In a separate bowl, combine egg yolks, sour cream, baking powder, salt, whey protein powder, and optional seasonings.
  4. Combine mixtures: Fold a small amount of egg whites into the egg yolk mixture until fully incorporated.
  5. Bake: Pour the mixture into a greased loaf pan and bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool: Allow the bread to cool in the oven for an additional 10 minutes after turning off the heat, then cool completely on a wire rack.
  7. Serve: Toast slices before serving for best results.

Notes

  • If making oopsie rolls, you will yield 8 rolls, and the nutrition information will be doubled.
