  • One refrigerated pie crust

Sloppy Joe Filling

  • pounds ground turkey (can substitute ground beef)
  • 1 medium onion, chopped finely
  • 1 cup corn (frozen or fresh)
  • 1 cup thick and chunky salsa (use mild for kids)
  • ½ cup chili sauce
  • 2 tablespoons packed light brown sugar
  • One 4.5-ounce can chopped green chiles (use mild for kids)
  • 2 tablespoons chopped fresh cilantro (optional)


Instructions

  1. Prepare the Pie Crust: Preheat the oven to 450°F. Unroll the refrigerated pie crust onto an ungreased cookie sheet. Using a sharp knife, carefully cut a jack o’ lantern face design out of the crust. Use some of the leftover crust scraps to form and attach a stem on top of the design. Bake the crust for 9 minutes or until it turns a light golden brown.
  2. Cook the Filling: While the crust is baking, heat a 10 or 11-inch nonstick skillet over medium-high heat. Add the ground turkey and chopped onion, cooking for 8 to 10 minutes and stirring often until the turkey is fully cooked and no longer pink.
  3. Add Remaining Ingredients: Stir in the corn, thick and chunky salsa, chili sauce, brown sugar, and chopped green chiles. Bring the mixture to a boil, then reduce the heat to medium-low and let it simmer for 8 to 10 minutes. Stir occasionally to allow flavors to meld and ensure everything is cooked thoroughly.
  4. Finish and Serve: Remove the skillet from heat and stir in chopped fresh cilantro, if desired. Carefully place the baked jack o’ lantern pie crust on top of the turkey mixture right in the skillet. Serve immediately for a whimsical and hearty meal.
