Description

Ingredients

Pastina Pasta:

  • 1 cup pastina pasta (stelline shape)

Vegetables:

  • 1 brown onion
  • 2 carrots
  • 2 celery sticks
  • 4 garlic cloves

Broth and Seasonings:

  • 6 cups vegetable broth (or chicken broth)
  • Salt and black pepper to taste
  • Optional – 1 bay leaf and 1 parmesan rind

Garnish (optional):

  • Chopped parsley
  • Grated parmesan cheese
  • Drizzle of olive oil

Instructions

  1. Roughly chop the vegetables: Onion, carrots, celery, and garlic.
  2. Pour the broth into a large pot and add the chopped vegetables, bay leaf, and parmesan rind. Season with salt and pepper. Simmer for approximately 20 minutes.

  3. Check vegetable tenderness: Ensure they are soft. Remove bay leaf and rind, then strain out the vegetables.
  4. Blend vegetables: Combine cooked vegetables with water in a blender until smooth.
  5. Combine blended mixture: Add it back to the pot with broth. Adjust seasoning. Bring to a boil.
  6. Add pastina pasta: Cook for 5-6 minutes, stirring occasionally.
  7. Serve: Garnish with parsley, parmesan, and olive oil. Enjoy!
