Pastina Pasta:
- 1 cup pastina pasta (stelline shape)
Vegetables:
- 1 brown onion
- 2 carrots
- 2 celery sticks
- 4 garlic cloves
Broth and Seasonings:
- 6 cups vegetable broth (or chicken broth)
- Salt and black pepper to taste
- Optional – 1 bay leaf and 1 parmesan rind
Garnish (optional):
- Chopped parsley
- Grated parmesan cheese
- Drizzle of olive oil
Instructions
- Roughly chop the vegetables: Onion, carrots, celery, and garlic.
- Check vegetable tenderness: Ensure they are soft. Remove bay leaf and rind, then strain out the vegetables.
- Blend vegetables: Combine cooked vegetables with water in a blender until smooth.
- Combine blended mixture: Add it back to the pot with broth. Adjust seasoning. Bring to a boil.
- Add pastina pasta: Cook for 5-6 minutes, stirring occasionally.
- Serve: Garnish with parsley, parmesan, and olive oil. Enjoy!
Pour the broth into a large pot and add the chopped vegetables, bay leaf, and parmesan rind. Season with salt and pepper. Simmer for approximately 20 minutes.
