This Instant Pot Neiman Marcus Chicken recipe is a creamy and flavorful dish that combines tender chicken with a cheesy sour cream sauce, served over fluffy white rice. It’s a quick and easy meal that’s perfect for busy weeknights.


Ingredients

For the chicken:

  • 1 cup sour cream
  • 3/4 cup (3 oz) shredded sharp cheddar cheese
  • 1 tsp mayonnaise
  • 1 tsp minced garlic
  • 1 Tbsp freeze dried chives or 1/4 cup chopped fresh chives
  • 1/2 tsp Tabasco sauce
  • 1/4 cup chopped pecans (or almonds)
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 cups chopped cooked chicken

For the rice:

  • 2 cups water
  • 1 1/2 cups converted or long grain white rice

Instructions

  1. Prepare the chicken: In a mixing bowl, combine sour cream, cheddar cheese, mayonnaise, garlic, chives, Tabasco sauce, pecans, salt, and pepper. Fold in the cooked chicken.
  2. Assemble the dish: Place the chicken mixture into a pot in pot dish. Pour water and rice into the Instant Pot. Put a trivet in the pot and place the pot in pot dish on top.
  3. Cook: Seal the Instant Pot, set to manual/pressure cook for 7 minutes. Allow a natural pressure release for 10 minutes before venting. Serve the chicken over the rice.
