Beef Ribs
- 7 to 8 bones of beef back ribs (about 3 pounds), cut into 2-bone pieces
Spice Rub
- 1 teaspoon fine sea salt
- 1 teaspoon fresh ground black pepper
- 1 teaspoon Ancho chili powder
Additional
- 1/2 cup water
- Optional: BBQ sauce for brushing before broiling
Instructions
- Season the ribs: Mix salt, pepper, and Ancho chili powder in a small bowl to create the spice rub. Sprinkle evenly on both sides of the ribs.
- Prepare the Instant Pot: Pour ½ cup of water into the Instant Pot or pressure cooker. Loosely stack the ribs bone side down inside the cooker.
- Pressure cook: Cook the ribs on high pressure for 25 minutes using Manual, Pressure Cook, or Pressure Cook – Custom mode. After cooking, allow the pressure to release naturally for about 15 minutes until the valve drops.
- Broil the ribs (optional): Place the ribs bone side down on a rimmed baking sheet. Broil on high until the meat starts to brown and crackle, about 5 minutes. Watch closely to avoid burning.
- Serve: Remove the ribs from the broiler and serve immediately. Optionally, brush with BBQ sauce before broiling for extra flavor and crispiness.
Notes
- A rack typically has 7 bones; cutting into 2-bone pieces may leave one single bone piece, which is fine.
- The ribs are tender and ready once out of the cooker, but broiling creates a delicious crispy bark.
- If desired, brush ribs with BBQ sauce right before broiling for enhanced flavor.
