- 5 small corn tortillas
- 1/2 cup vegetable oil
- Kosher salt, to taste
Instructions
- Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add the diced yellow onion and minced garlic, cooking until the onion is translucent and fragrant, about 4-5 minutes.
- Add Spinach: Add the coarsely chopped spinach to the skillet. Cook and stir until the spinach is wilted and most of its moisture has evaporated, about 5-7 minutes.
- Create Dip Base: Lower the heat and stir in the milk, cream cheese, Worcestershire sauce, and red pepper flakes. Cook until the cream cheese melts and the mixture is creamy and smooth.
- Add Cheese: Stir in the shredded mozzarella until melted and the dip is bubbly. Season with coarse salt and ground pepper to taste. Keep warm over low heat while preparing chips.
- Prepare Tortilla Chips: Cut the small corn tortillas into wedges. Heat vegetable oil in a deep skillet or frying pan over medium-high heat. Fry the tortilla wedges in batches until golden and crispy, about 1-2 minutes per side.
