Instructions

  3. Prepare Potatoes for Roasting: Spread 1 tablespoon of olive oil on a baking sheet and add the chopped sweet potato and small potatoes. Sprinkle with 1-2 teaspoons kosher salt and a pinch of black pepper, then toss everything to coat the potatoes evenly with oil and seasonings.
