Delicious Halloumi Wraps with a sweet and sticky sauce, fresh vegetables, and creamy hummus. These wraps combine crispy fried halloumi coated in a honey-chilli-ketchup sauce, fresh crunchy vegetables, and tangy lime for a quick and satisfying lunch or dinner option.

Sticky Sauce
- 2 tbsp Honey
- 2 tbsp Sweet chilli sauce
- 2 tbsp Ketchup
Halloumi and Wraps
- 1 tsp Sunflower oil
- 400 g Halloumi (x2 packs)
- 8 Small tortilla wraps
Vegetables and Fillings
- 2 Little gem lettuces (Finely shredded)
- 1/2 Red onion (Thinly sliced)
- 250 g Cherry tomatoes (Halved)
- 1/2 Cucumber (Thinly sliced)
- 120 g Hummus
- 1 Lime
Instructions
- Make the sticky sauce: In a small bowl, combine the honey, sweet chilli sauce, and ketchup until fully mixed into a smooth sticky sauce.
- Prepare the halloumi: Cut each of the two blocks of halloumi cheese into 8 slices, creating 16 slices total to fit evenly into your wraps.
- Fry the halloumi: Heat the sunflower oil in a pan over high heat. Once hot, add the halloumi slices and fry each side for 3-5 minutes, avoiding moving them too much to allow a golden brown crust to form.
- Coat with sauce: Pour the sticky sauce into the pan with the halloumi, turning the slices carefully to coat them thoroughly. Cook for another 2-3 minutes until the sauce is warm and slightly thickened on the cheese.
- Warm the wraps: While the halloumi cooks, heat the tortilla wraps. You can microwave them briefly, warm them wrapped in foil in a low oven, or carefully toast over an open gas flame to add some colour and texture.
- Assemble the wraps: Spread hummus evenly across each warm wrap. Add a layer of finely shredded lettuce, halved cherry tomatoes, thinly sliced red onion and cucumber. Top with the sticky halloumi slices and finish each wrap with a squeeze of fresh lime juice.
