  • 1 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Bowl Assembly

  • 1 lb broccoli florets
  • 2 cups cooked white rice, brown rice, or quinoa
  • Olive oil, salt, pepper for roasting
  • Lime wedges for serving
  • Optional: fresh parsley or chopped green onions for garnish

Instructions

  1. Marinate the Chicken – Whisk together olive oil, paprika, garlic powder, cayenne, lime juice, salt, and pepper. Marinate chicken in the mixture, refrigerate for at least 30 minutes or overnight.
  2. Grill the Chicken – Cook marinated chicken on a grill pan or outdoor grill until charred and cooked through. Rest before slicing.
  3. Cook the Broccoli – Toss broccoli with oil, salt, and pepper. Roast at 425°F until golden or steam until tender.
