  • 2 green onions, finely chopped

  • 2 celery stalks, diced

  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon harissa seasoning
  • 810 oz baby spinach
  • 1/4 cup lemon juice
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 2 cups frozen peas
  • 34 large eggs
  • 4 oz feta cheese, crumbled
  • Kosher salt and black pepper, to taste

Instructions

  1. Prepare the Vegetables: Heat olive oil in a large non-stick frying pan. Sauté green onions, leek, and celery until softened. Add garlic, cumin, paprika, and harissa; cook for an additional minute.
  2. Add Greens and Herbs: Stir in spinach, lemon juice, parsley, and cilantro; cook until wilted. Add peas and simmer the mixture.
  3. Add the Eggs: Make indentations in the mixture and crack eggs into them. Partially cover and poach until desired doneness.
  4. Finish and Serve: Remove from heat, sprinkle with feta, salt, and pepper. Serve hot.
