Description

These Duck Fat Roastie Potatoes are crispy on the outside, tender on the inside, and packed with flavor from the duck fat. A perfect side dish for any meal!


Ingredients

  • 4 lbs. baby gold potatoes, peeled & halved

Seasoning:

  • 2 teaspoons baking soda
  • 2/3 cup duck fat
  • Kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F with a roasting pan filled with duck fat.
  2. Prepare the Potatoes: Boil the potatoes in salted water and baking soda until par-cooked. Drain and shake to create craggy edges.
  3. Roast the Potatoes: Place the par-cooked potatoes in the preheated pan with duck fat. Bake until golden and crispy.
  4. Season and Serve: Remove the potatoes from the fat, season with salt and pepper, then plate and enjoy!
