Potatoes:
- 4 lbs. baby gold potatoes, peeled & halved
Seasoning:
- 2 teaspoons baking soda
- 2/3 cup duck fat
- Kosher salt and freshly cracked black pepper, to taste
Instructions
- Preheat the Oven: Preheat the oven to 425°F with a roasting pan filled with duck fat.
- Prepare the Potatoes: Boil the potatoes in salted water and baking soda until par-cooked. Drain and shake to create craggy edges.
- Roast the Potatoes: Place the par-cooked potatoes in the preheated pan with duck fat. Bake until golden and crispy.
- Season and Serve: Remove the potatoes from the fat, season with salt and pepper, then plate and enjoy!

- Make sure to shake the pan during roasting to ensure even cooking.
