Chicken

Sauce

  • 1 stick butter (1/2 cup)
  • 2 tbsp minced fresh garlic
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 cup dry white wine
  • 3 1/2 cups chicken broth

Rice

  • 1 1/2 cups uncooked white rice

  • 1/2 cup fresh grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare and Cook Chicken: Season the chicken tenderloins with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat, then sauté the chicken until cooked through and golden brown on both sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Make the Sauce: In the same skillet, melt the butter over medium heat. Add the minced fresh garlic and sauté until fragrant, about 1-2 minutes. Stir in red pepper flakes and salt. Pour in the dry white wine and chicken broth, bringing the mixture to a simmer. Let the sauce reduce slightly, then reserve about 2 tablespoons of it for finishing the dish. Keep the remaining sauce in the skillet for cooking the rice.
  3. Cook the Rice: Add the uncooked white rice to the skillet with the sauce, stirring briefly to coat the grains. Pour in the chicken broth mixture if additional liquid is needed. Cover the skillet and simmer gently until the rice is tender and has absorbed most of the liquid, approximately 15-20 minutes.
  4. Finish the Dish: Once the rice is cooked, sprinkle fresh grated Parmesan cheese over it, and place the cooked chicken pieces on top. Drizzle the reserved 2 tablespoons of sauce over the chicken and rice. Cover the skillet again and let the dish stand off the heat for a few minutes to meld the flavors. Garnish with additional Parmesan and fresh parsley before serving.
