Garlic Butter

  • 8 tsp (1 stick) butter
  • 5 cloves garlic, minced
  • 2 tbsp olive oil
  • 3 sprigs thyme leaves, chopped
  • 1 sprig rosemary leaves, chopped
  • 1 sprig oregano leaves, chopped
  • 8 sage leaves, chopped
  • 1/4 tsp red pepper flakes

Bread Dough

  • 180 mL warm water (110ºF-115ºF)
  • 10 grams instant dry yeast
  • 5 grams white granulated sugar
  • 15 grams extra virgin olive oil
  • 280 grams bread flour, sifted
  • 10 grams kosher salt

Topping

  • 1/2 cup freshly grated parmesan cheese
  • Flaky sea salt for garnish


Instructions

  1. Make Garlic Butter: Melt butter with olive oil, chopped herbs, minced garlic, and red pepper flakes in a small saucepan over medium-low heat. Let the flavors infuse over low heat for 5 minutes without browning the butter. Turn off heat and allow the butter to cool before using.
  2. Make the Bread Dough: In the bowl of a stand mixer fitted with the dough hook, combine warm water, instant yeast, sugar, olive oil, sifted bread flour, and kosher salt. Knead on medium-high speed for 6-7 minutes until dough pulls away from the sides and feels barely tacky without tearing when stretched.
  3. First Rise: Grease a large bowl, place dough inside, cover, and let it rise in a warm place for 1 hour until doubled in size.
  4. Preheat Oven: Once risen, preheat the oven to 450ºF (230ºC).
  5. Shape Rolls: Turn dough onto a lightly floured surface. Use a bench scraper or knife to divide into 12 equal pieces. Roll each into logs and tie into knots, then place back into the large bowl.
  6. Toss in Garlic Butter and Parmesan: Pour the cooled garlic herb butter over the dough knots along with 1/4 cup of parmesan cheese. Gently toss using your hands to coat evenly.
  7. Prepare Baking Dish: Spray an 8×8 inch baking dish or 8 inch cake pan with baking spray. Arrange the coated rolls evenly in the dish. Cover rolls with the remaining parmesan cheese.
  8. Bake: Bake rolls in the preheated oven for 12-15 minutes until golden and cooked through.
  9. Finish and Serve: Remove from oven, brush again with any remaining garlic butter while warm, sprinkle with flaky sea salt, and serve immediately.
