Description

Eyeball Pinwheels are a spooky and fun Halloween party appetizer featuring creamy ranch-flavored cream cheese, ham, and black olives arranged inside soft flour tortillas. Rolled and sliced into bite-sized pinwheels, these festive snacks are decorated with roasted red bell pepper ‘bloodshot’ details for a creepy eyeball effect, perfect for holiday gatherings.

Ingredients

Scale

Ranch Cream Cheese Filling

  • 2 ounces cream cheese, softened (8 packages total)
  • 1 ounce dry ranch dressing mix (1 packet)

Tortilla Wraps

  • 10 flour tortillas (burrito size)

Fillings and Garnish

  • 2 ounces canned large black olives (about 6 olives per roll; some unused)
  • Thinly sliced ham (approximately 20-40 slices, depending on size and preference)
  • Partial jar of roasted red bell pepper, thinly sliced

Instructions

  1. Prepare the cream cheese mixture: Beat together the softened cream cheese and dry ranch dressing mix until well blended to form a smooth flavorful spread.
  2. Shape the tortillas: Place a tortilla on your work surface and trim off two opposite sides to create a more rectangular shape, facilitating an even roll.
  3. Assemble the fillings: Spread a generous layer of the ranch cream cheese mixture evenly over the tortilla surface. Near one of the uncut edges, arrange a line of about 6 large black olives end to end. In the middle area, lay 2 slices of ham, overlapping slightly if necessary.
  4. Roll the tortillas: Carefully roll the tortilla from the uncut edge over the olives, keeping the olives in place. Continue rolling tightly over the ham and all the way to the end without damaging the tortilla. Repeat this for all tortillas.
  5. Chill the rolls: Wrap each rolled tortilla individually in plastic wrap and refrigerate for at least 4 hours, or overnight, allowing the flavors to meld and the roll to firm up.
  6. Slice into pinwheels: Remove rolls from the refrigerator, unwrap one at a time, and use a sharp knife to slice into 1/3 to 1/2-inch thick pinwheels.
  7. Add finishing touches: Take thin slices of roasted red bell pepper, fold each in half, and insert them folded-side up into the holes in the olive slices within the pinwheels to mimic bloodshot veins on the eyeballs. Flip pinwheels as needed to find olive holes for garnish.
  8. Serve: Arrange the completed eyeball pinwheels on a serving plate or tray and enjoy as a creepy Halloween party appetizer.

Notes

  • Use jack-o-lantern napkins to enhance the Halloween theme when serving.
  • The number of ham slices can be adjusted based on tortilla size and personal preference for filling amount.
  • Ensure olives are placed end to end without gaps to get the best eyeball effect.
  • Rolling the tortillas tightly but gently prevents cracking and holds the filling together well.
  • Chilling overnight improves sliceability and flavor melding.
