Instructions
- Simmer broth: In a large stock pot, combine turkey broth, fish sauce, star anise, cloves, cilantro stems, dark brown sugar, cinnamon stick, and ginger pieces. Bring to a gentle simmer and let it cook for about an hour to develop a rich, aromatic broth. After simmering, strain the broth through a fine mesh colander to remove solids, reserving the flavorful liquid.
- Cook noodles: Return the strained broth to heat and add the rice noodles. Allow the noodles to soak and soften in the hot broth for approximately 10 minutes until tender but not mushy.
- Add turkey: Stir in the shredded leftover turkey to warm it through in the broth and noodle mixture.
- Serve and garnish: Ladle the soup into bowls, placing the noodles and turkey in the center and pouring the broth over the top. Garnish with fresh cilantro, mint, lime wedges, and any of your preferred toppings such as hot sauce or sprouts. Be sure not to skip the lime for a bright finish.
Notes
- This turkey noodle soup is incredibly light yet flavorful, making it perfect for leftover turkey use and cozy chilly days.
- You can adjust the toppings according to your preference for spice and freshness.
- If turkey broth is unavailable, chicken broth can be a suitable substitute, though the rich turkey flavor may vary slightly.
- Allowing the broth to simmer long enhances the depth and complexity of flavors but can be shortened if pressed for time.
