Description

This classic omelette recipe is a quick, easy, and delicious way to enjoy eggs any time of day. Made with simple ingredients like eggs, salt, and butter or olive oil, it’s a versatile dish that can be customized with your favorite fillings for a satisfying meal.

Ingredients

Scale

Egg Mixture

  • 2 large eggs
  • Sea salt and freshly ground black pepper, to taste

For Cooking

  • Butter or extra-virgin olive oil (for the pan)

Optional Fillings

  • Desired fillings such as cheese, vegetables, herbs, or meats (suggestions available in the blog post)

Instructions

  1. Whisk the eggs: Crack the eggs into a medium bowl and whisk until the yolks and whites are fully combined. Season the mixture with a pinch of sea salt to taste.
  2. Heat the pan: Place an 8-inch nonstick skillet over medium heat. Add a small pat of butter or a drizzle of extra-virgin olive oil, swirling it around so the entire bottom of the pan is coated.
  3. Cook the eggs: Pour the whisked eggs into the pan and immediately reduce the heat to medium-low. Allow the eggs to cook undisturbed until the edges begin to set, about 10 seconds.
  4. Shape the omelette: Using a spatula, gently push the cooked edges toward the center of the pan, letting the uncooked eggs flow to the edges. Tilt the pan as needed to help the raw egg distribute evenly, and continue this process until the omelette is thickened and nearly set.
  5. Add filling and fold: Once the omelette is mostly set but still slightly soft on top, add your desired fillings to one half. Then carefully fold the other half over the fillings.
  6. Finish cooking: Let the omelette cook for another minute or so until the eggs are fully set and the filling is warmed through. Remove from heat, season with additional salt and freshly ground black pepper if desired, and serve immediately.
