Instructions

  1. Prepare the Jelly: Follow the pack instructions for the jelly, usually dissolving the jelly powder in boiling water and topping up with cool water. Pour the jelly mixture into the trifle bowl.
  2. Add Sponge and Fruit: Add the trifle sponges or sponge fingers to the jelly, breaking them in half if desired. They may float at first but will sink as they absorb the jelly. Drain the fruit cocktail and scatter the fruit over the jelly and sponge layer.
  3. Set the Jelly: Refrigerate the jelly bowl for several hours or as per the jelly pack instructions until fully set and firm.
  4. Prepare Custard: Make the custard according to the pack instructions, adding a little extra powder if using powdered custard to get a thicker consistency. Allow the custard to cool slightly.
  5. Add Custard Layer: Pour the cooled custard evenly over the set jelly layer, spreading it to the edges of the bowl. Return to the fridge and chill until the custard layer is set and firm.
  6. Whip the Cream: In a cold bowl, whip the cream until stiff peaks form. Be careful not to overwhip as it can turn into butter.
  7. Top with Cream and Garnish: Spread or pipe the whipped cream evenly atop the custard layer. Finish by decorating with sprinkles or crushed chocolate flake if desired.
