Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper to prevent sticking and make cleanup easier.
  2. Reduce apple cider: Pour the apple cider into a saucepan and bring it to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for 10-15 minutes until it reduces to about 1/2 cup. Remove from heat and allow it to cool completely.
  3. Mix wet ingredients: In a large mixing bowl, combine the cooled reduced apple cider, melted coconut oil, vanilla extract, egg, honey or maple syrup, and apple butter. Stir well until fully combined.
  4. Add dry ingredients and apples: Add the all-purpose flour, baking soda, apple or pumpkin pie spice, and kosher salt to the wet mixture. Mix gently until just combined to avoid overworking the batter. Fold in the thinly sliced Honeycrisp apples carefully. The batter will be thick at this point.
