Bruschetta Topping

- 2 cloves garlic, minced

- 2 teaspoon balsamic vinegar
- 2 tablespoon thinly sliced basil leaves
- Ground pepper, to taste
- Balsamic glaze, to taste, optional
Instructions
- Start the bruschetta: Combine the chopped tomatoes with salt and minced garlic in a mixing bowl; stir well and let sit while the chicken cooks to allow flavors to meld.
- Prepare the chicken: Place one chicken breast onto a sheet of parchment paper and fold over. Pound the chicken with a rolling pin to an even thickness just under 1 inch. Repeat with all breasts.
- Make the seasoning blend: In a small bowl, mix Italian seasoning, kosher salt, garlic powder, onion powder, and ground pepper until well combined.
- Season the chicken: Brush both sides of the chicken breasts with olive oil, then sprinkle evenly with the seasoning blend.
- Cook the chicken: To Grill: Heat a grill or grill pan over high heat. Cook chicken for 5-6 minutes per side until internal temperature reaches 165°F. Remove and rest for 5 minutes. To Bake: Preheat oven to 400°F and line a baking sheet with parchment paper. Roast chicken 10-12 minutes until internal temperature reaches 165°F. Remove and rest 5 minutes.
- Finish the bruschetta topping: Stir olive oil, balsamic vinegar, basil, and ground pepper into the tomato mixture. Adjust seasoning with additional salt, pepper, or vinegar if needed.
- Serve: Spoon the bruschetta topping over the grilled or baked chicken breasts. Drizzle with balsamic glaze if desired and serve immediately.
