  • ½ tsp coarse salt
  • 2 tsp runny honey


Instructions

  1. Preheat Oven: Preheat your oven to 180°C Fan to prepare for roasting the chickpeas evenly.
  2. Prepare Chickpeas: Drain the chickpeas from the tins and remove their outer skins for a crunchier texture. Spread them on paper towels and use another towel to dry thoroughly by gently rolling and pressing, ensuring no moisture remains.
  3. Season Chickpeas: In a large bowl, combine olive oil, smoked paprika, chili powder, and coarse salt. Add the dried chickpeas and toss well to coat them evenly with the spice mixture.
  4. First Roast: Spread the coated chickpeas in a single layer on a large baking tray (or divide between two trays). Place in the preheated oven and roast for 10 minutes.
  5. Add Honey and Continue Roasting: Remove the tray(s) from the oven and drizzle honey all over the chickpeas. Stir gently to distribute the honey and spread the chickpeas out again to prevent clumping.
  6. Final Roast: Return the tray(s) to the oven for an additional 15 minutes. Keep an eye on the chickpeas as tin sizes may vary; check after 10 minutes to ensure they become crunchy and lightly browned but not burnt.
  7. Cool and Store: Allow the roasted chickpeas to cool completely on the baking tray. Once cooled, store them in an airtight container at room temperature to maintain crispness.
