Mushroom Sauce:

  • 2 tbsp (30g) unsalted butter
  • 1/2 tbsp olive oil
  • 300g/ 10 oz mushrooms, sliced
  • 2 garlic cloves, finely chopped
  • 1/2 cup white wine
  • 1/2 cup chicken broth/stock
  • 3/4 cup cream
  • 1/3 cup parmesan, finely grated
  • 1/2 tsp salt and pepper

Serving:

  • Extra parmesan, for serving
  • Parsley, roughly chopped (optional)

Instructions

  1. Cook Pasta: Cook pasta in salted water until 1 minute less than al dente. Reserve 1 cup of cooking water before draining.
  2. Prepare Mushroom Sauce: Melt butter and oil in a skillet. Cook mushrooms until golden, then add garlic. Pour in wine, followed by broth, cream, parmesan, salt, and pepper. Simmer for 2 minutes.
  3. Combine: Toss drained pasta in the sauce until well coated. Add reserved pasta water if needed to adjust consistency.
  4. Serve: Garnish with parsley and extra Parmesan before serving.
