Pasta:
- 160g/ 6oz fettuccine or linguine
Mushroom Sauce:
- 2 tbsp (30g) unsalted butter
- 1/2 tbsp olive oil
- 300g/ 10 oz mushrooms, sliced
- 2 garlic cloves, finely chopped
- 1/2 cup white wine
- 1/2 cup chicken broth/stock
- 3/4 cup cream
- 1/3 cup parmesan, finely grated
- 1/2 tsp salt and pepper
Serving:
- Extra parmesan, for serving
- Parsley, roughly chopped (optional)
Instructions
- Cook Pasta: Cook pasta in salted water until 1 minute less than al dente. Reserve 1 cup of cooking water before draining.
- Prepare Mushroom Sauce: Melt butter and oil in a skillet. Cook mushrooms until golden, then add garlic. Pour in wine, followed by broth, cream, parmesan, salt, and pepper. Simmer for 2 minutes.
- Combine: Toss drained pasta in the sauce until well coated. Add reserved pasta water if needed to adjust consistency.
- Serve: Garnish with parsley and extra Parmesan before serving.
