  • 100g / 7 tbsp unsalted butter, softened, divided
  • 1 large garlic clove, finely minced (about 1 tsp)
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika (can substitute regular paprika)
  • 1 tsp chili flakes / red pepper flakes
  • 1/4 tsp cooking salt / kosher salt (halve if using table salt)


Instructions

  1. Sauté garlic: In a small frying pan, melt 1 tbsp (15g) of butter over medium heat until it begins foaming. Add the finely minced garlic and cook, stirring continuously, for 30 seconds until it turns a very light golden color. Remove the pan from heat and let the garlic cool for 3 minutes; it will deepen in color during this time.
  2. Mix ingredients: In a small mixing bowl, combine the remaining butter with Dijon mustard, smoked paprika, chili flakes, and salt. Pour the sautéed garlic and melted butter mixture over the rest of the ingredients. Stir thoroughly until all ingredients are fully combined into a uniform butter.
  3. Serve: Use the cowboy butter immediately with steak for a delicious enhancement. It also pairs wonderfully with other cooked meats like chicken, seafood, vegetables, and even hot steamed rice or toast.
